Found along the Atlantic seaboard and in the Gulf of Mexico, blue crabs are named for the coloration on their shells. Softshell crabs are blue crabs prepared for cooking while in molt (after they have shed their old shell and before the new shell forms). Crabs are able to regrow lost legs or claws and are even able to intentionally cede a leg to a hungry predator. Legs grow back after the next molt.
